The first, from Beth, we made today. Filo triangles with spinach and feta. Once we got the hang of folding them and made sure to absolutely drench them in olive oil so the filo didn't rip into tiny pieces, it didn't go too badly! The last two looked like actual triangles instead of strange, misshapen lumps of a dubiously food-like nature. They also puffed up a bit and the filling bubbled out the edges. Photo and recipe:

The next one is from Trista, who responded to my comment about avocados in porridge (this post) with a recipe I will be forcibly preventing Sherlock from eating for breakfast every morning:
So simple I'm pretty sure even I could make it. (No, Sherlock. Not first thing in the morning. As an after school snack maybe.) {she has it for breakfast!} (She's a grown up. You're still growing, your body has different nutritional needs, and also I don't want your teacher to murder me.)

1) Get some pre-made filo pastry
2) Blanch the spinach or cook with onions (or perhaps not?), season with salt and pepper
3) When cool, stir through enough feta to make it tasty
4) For each triangle, lay out two sheets of filo on top of each other (spray with spray oil between to get puffy pastry, as packet suggests) put a small amount of filling on, wrap up and bake.Thanks, Beth! They were delicious.

Add cocoa powder to taste
Add sugar to taste

I was meaning to ask why you always post so late?
I can't imagine that you get to sleep in ever.
(I have an excuse west coast of America, it's only 19:54 right now).
I often don't sleep through night, though I must say tonight is a particularly horrendous example. At least I've got Andy Murray (supposedly the pride of British tennis) to watch.
